Tasting

You smell the most complex thing humans consume. When people talk about the flavors of coffee — notes of orange, or hints of pepper — it’s because those organic molecules are contained in the coffee bean. If a coffee reminds you of apple pie, it’s because coffee shares some of the same components as food, like lactic and malic acid.

Flavour only matters when it appeals to you. What do you like? What does this scent remind you of? Are you looking for a full-bodied Italian coffee, or a delicate, tea-like finish? Chocolate aroma or hints of spiciness etc.?

It puts a smile on your face when you are having a nice espresso, that trace of sweetness after taste, that little hint of chocolate aroma. That is the moment you always ask for more.

At the same time, you won’t forget that silky smooth flat white you had this morning, that perfect coffee-milk balance, that hint of  licorice taste cuts through the milk so perfectly. It gives you that sensational ‘Out of the World’ feeling.

Roasting

Someone stands by that roaster all day, who knows exactly how to bring the best out of every bean; someone notices that slightest changes during that roasting process, someone that can read inside of that 250̊ C hot drum — that ideal ratio of sweetness to acidity balance. That is something far beyond just patience, it is not just experience. It is called ‘Passion’!

Adjust times and temperatures throughout the day, knowing that ten fifteen seconds could make the difference between very good and perfection. To observe every single batch, match them to the exactly same profile. That is what we do every day. We put our hearts in our coffee.

We invite all of you to visit our roasting house one day; we would love to share our experience with you.
